Clark’s dream to make the best beef jerky in Texas was born when he was 12 years old. Looking to save money on snacks for camping trips, his father bought him his first donut style Westinghouse dehydrator. And also taught him the different cuts of beef, their uses, and the best ways of making jerky from those cuts. After purchasing a pack of inside skirt steak from the local grocery store, mixing up some sauces and seasonings that were in the pantry, Clark made his first batch of BBQ-Cajun jerky. With time and practice in the years following, he has mastered the art of making the tastiest, homemade-style beef jerky Texas has to offer.
